Mother's Day Weekend.

My sister Lindsay, my mom, and I all went out to dinner Friday to celebrate Mother’s Day a little early. This was Lindsay’s idea so she picked this restaurant she really wanted us to try called Café Suprnatural.
This is an excerpt from the website.

Cafe Supernatural provides quick cuisine using as much local and organically grown ingredients as possible. Located in the heart of Salt Lake City with Prana Yoga Trolley Square, our efforts are to sustain optimal health for the individual. With a 100% plant-based and 100% gluten-free menu,

So Yes, it is vegetarian. The food was tasty and our plates were pretty and colorful.

Lindsay and I both got this dish called Manchu Pichu. It is Quinoa with carrots, cauliflower, greens, other vegetables, and yes, those are flower petals being used as a garnish.

 Mom’s Salad

Yummy Smoothie called the Love Bomb.

Saturday I went to my niece Isabel’s piano recital. All of the songs were played by an ensemble of 8 pianos. They started everything with a mini parade. The student's threw candy and everything.

It was fun. Lindsay got to play along with Isabel. Notice the smile on Isabel’s face in the pictures. It’s cute.

Sunday I made my mom dinner for Mother’s day. I made this great Irish beef stew. I got the recipe from the slender kitchen website. You can look at the recipe here.

I had to get a little creative. I didn’t use parsnips at all and I put in a little A1 Sauce instead of Worcestershire Sauce. Don’t judge. It actually turned out great.
